A HEALTHY THANKSGIVING // PUMPKIN BREAD (VEGAN OPTION )

My Favorite Fall Recipe.. A perfect Thanksgiving Morning treat :) 

THE ETERNAL CHILD // PUMPKIN BREAD

PUMPKIN BREAD !

 

1 Cup Sucanat Sugar ( OR Coconut sugar) 2 Cups if your a sweet one!

1 Can (15 Ounces) Organic Solid -Pack Pumpkin

1 Cup Unsweetened Natural Apple Sauce

1 Full Egg & 1 Egg White OR ½ cup Almond Milk (Vegan Option )

3 ⅓ Cups Spelt Flour

2 ½ Teaspoons of Pumpkin Pie Spice (Cinnamon, Nutmeg, Ginger )

2 Teaspoons Baking Soda

1 Teaspoon Baking Powder

½ Teaspoon Salt

1-2 Cups of Chopped Walnuts, Pepita’s (Pumpkin Seed)  OR Pecans & Raisins

     (choose your liking)

 

In a bowl, combine the sugar, pumpkin, applesauce and egg/ or milk substitute; mix well. In another bowl combine flour, spices, baking soda, baking powder & salt ; gradually add to pumpkin mixture and mix well.  Stir in nuts and/or raisins if desired. Pour into two 8in x 4in loaf pans coated with cooking spray.  Top with extra chopped nuts!

 

Bake at 350 for 40-50 minutes or until browned on top. Make sure to check every 20 min! Cool for 10 min before removing from pans.  

Yield: 2 Loaves (14 Slices per loaf)
