A WINTER TABLE INSPO + A THROW BACK TO MY DAY OF THANKS // RECIPE FOR CRANBERRY + GOATS CHEESE CROSTINI W/ BALSAMIC CARMELIZED ONIONS + THYME

As we find ourselves approaching yet another holiday / gathering / large family meal — don’t we all feel just a little bit tired?!   I know I do!   I have spent the last few weeks traveling for work and pleasure, tackling the streets to Chicago and then New York City and I have finally made it home.  I must admit, sitting here in my childhood bed, with my laptop on my lap, listening to the creaking of the bamboo outside my window and finishing up the end of my 2015 work load, is the most relaxed I have been in weeks. 

I left Los Angeles the morning after Thanksgiving and have been traveling ever since. Not having your daily routine and warmth of your home can be really hard when your trying to work along with travel. This past trip was definitely especially hard as it kept coming with unexpected surprises — stolen jackets and phones, lost credit cards and id’s and not to mention two different sicknesses that tried to take me down.  I’m not guna lie, it definitely weighed me down even after I recovered. 

Saying all of this, what I’m trying to get at is I haven’t exactly had the best finishing touch to the year. All these occurrences not only messed with my travel plans, but it put me so very behind on all of my work and forcing me to neglect what I love doing the most - my photography and my blog.

So in an attempt to come back, I am posting a little winter table inspiration!!  This table setting was actually my inspiration for my thanksgiving meal.  I haven’t been able to share my dinner with you until now, and figured it was better late then never!  I was actually really stoked about how this table setting turned out.  It is pretty universal, I had wanted it to feel like winter, as I knew the next month was going to be based around traveling and not gathering. You will get to see in the first section my initial inspiration setting along with the final end product of the day.  I always do a test run a few days before to make sure that the vision translates properly.  

I will let the table speak for itself.  Hope some inspiration comes form my table to your this holiday!! 

This table is made up of long branches covered in seeded eucalyptus and leafy eucalyptus along with clippings from a Sorbus Eastern Promise tree that provide clusters of rose-pink berries in the autumn.

A THROWBACK TO MY GATHERING OF THANKS!

Cranberry + Goats Cheese Crostini w/  Balsamic caramelized onions and thyme  

Rosemary roasted cranberry-pomegranate glazed turkey

Cranberry + Goats Cheese Crostini w/ Balsamic Caramelized Onions + Thyme

 

FIRST MAKE THE CROSTINI IN THE OVEN.  PREHEAT THE OVEN AT 400. THINLY SLICE THE BAGUETTE INTO 1/3 IN PIECES. LAY OUT ON GREASED PAN AND QUICKLY DRIZZLE BOTH SIDES WITH OLIVE OIL ( OR SPRAY WITH OIL SPRAY).  PLACE IN OVER FOR ABOUT 5 MIN OR UNTIL LIGHTLY TOASTED. TAKE OUT AND COOL.

THINLY SLICE ONION AND SATAY OVER HOT HEAT WITH EVOO UNTIL THEY BEGIN TO SOFTEN.  ADD ABOUT A TABLESPOON OF SUGAR AND MIX FOR ANOTHER MINUTE.  THEN ADD 1/4 CUP OF BALSAMIC VINEGAR, MIX AND LOWER HEAT.  LET THE ONIONS REDUCE AND CARAMELIZE, OCCASIONALLY MIXING.

ON THE COOLED CROSTINI, SPREAD GOATS CHEESE THEN CRANBERRY.  TOP WITH ONION AND SPRINKLE WITH THYME. 

  • 1 French baguette

  • 1 Sweet white onion

  • 5 - 6 oz Goats Cheese

  • a handful of fresh thyme

  • EVOO

  • Balsamic vinegar 

  • Raw sugar

  • S+P
