Rose Baked Donuts with Superfood + Dark Chocolate Glaze ( Vegan)

As a believer in superfoods, I try and use every opportunity as a chance to get the goods in. This time I used Nutra Organics Superfood latte powders.  With their vibrant colors and sweet flavors, they are the perfect additions to a sweet treat. I used their Velvet and Mermaid Latte’s to paint my baked goodies with both color and nutrients. Both of these mixes are filled with SO MUCH GOODNESS, it's kinda unreal how GOOD they also taste. Intentionally first created as a healthy replacement to a traditional espresso to tea based latte, these powders have so many more uses than just mixed in a old cuppa' milk.

The Doughnuts:

2 2/3 cups all purpose flour

2/3 cup sugar

2 tsp baking soda

½ tsp salt

1  cup non-dairy milk

4 tbs apple cider vinegar

4 tbs canola oil

1/2 cup Rose Simple Syrup 

 

Rose Simple Syrup

2 cups water

2 cups sugar

2-3 tsp Rose Water 

the glaze:

1 Bag of organic powdered sugar

1/2 cup of simple syrup 

*You will need a donut baking tray for this recipe. I use the 3in molds. 

Begin by making the syrup.  In a saucepan add water , Sugar +  Rose Water.  Bring to a boil, then reduce to a low boil and let simmer for 15-20 minutes, until the syrup thickens.  Remove from heat and let cool. I store my syrups in mason jars for safe keeping. They will keep up to 5 days.

directions: 

Preheat the oven to 350. In a bowl combine flour, sugar, salt, baking  + soda. In a separate bowl combine milk, oil, vinegar and the Rose syrup. Combine the wet + dry  ingredients and mix until combined.  If it seems too dry, keep adding small amounts of almond milk until moist.  

Grease your baking pan and use a spoon to fill the donut holes. Using your finger spread out the dough into the donut shape, removing access amounts. The dough must be below the line of the shape as it will rise. Also make sure to clean off the center hole shape to ensure the dough does not bake over the center. Bake 10-12  minutes until FIRM. Let cool 5 minutes and remove from the pan onto parchment paper. 

If you are powdering any of your donuts, make sure to cover them with powder while they are warm. You will need to powder them again when they are cool.  

Glazing:

Combine sifted powdered sugar with syrup of choice or water if you are using plain glaze.  I start with about 1/3 cup of sugar and slowly add the syrup while mixing.  This will help prevent the sugar from clumping.  Keep adding both sugar and syrup til you have enough glaze. You can also use less syrup and add water instead.  This will make the syrup less sweet and thinner -- which for some is better.

Make sure the donuts have completely cooled before glazing, unlike when powdering. Dip the doughnuts into the glaze, covering both sides - or just simply glazing the top.   Pull them up and twist slightly to catch the glaze on the top of the doughnut. Allow the glaze to set and dip a second time- for thinker glazed donuts.

The Galaxy Effect:

You can also mix the red velvet and mermaid latte mixes into the glaze before dipping. As you see in the photos I made a marbleized glaze by adding the 2 powders into a tray and creating a design to dip into. I recommend trying this, you can also use a spoon to spread out the colored glaze onto the donut.

The Topping

After you have glazed, now is the time to decorate ! Before the glaze drys, sprinkle toppings. I used a mix of the Nutra Organics Superfood Latte Mixes; Red Velvet and Mermaid Latte, along with rose flower crystals. You can use anything here, sprinkles, tea flowers, candied bits - get creative.

I actually think my favorite donuts, were the dark chocolate dipped ones. The combination of the floral rose with the bittersweet creamy addition of the dark chocolate is kinda perfection. Melting chocolate is easy using the double boiler. Simply place a smaller pot inside a larger pot filled with 2 inches of water. Add the chocolate bits into the smaller pot with about 1/4 cup of almond milk or cream. Mix constantly until completely melted. Add more liquid or chocolate if needed. A little goes a long with with melting chocolate. Remove from stove and dip the donuts in the chocolate while hot. Let cool.
